A Slice of Summer – Banana Berry Cake

Today was a perfect day to bake a cake.  It was cold and wet outside and inside I had the fire going and the house was toasty and warm. No need to even pull out the books.  I knew straight away what I’d make as I know this recipe off by heart.

This is my favorite cake recipe at the moment, it’s easy, (even easier than my Raspberry and Peach Tart  and it’s always a big hit.  It reminds me of summer with the tang of the berries throughout. And summer it definitely ain’t here.

Now I love raspberries but in this recipe they can be substituted for blackberries, blueberries or you can even use frozen mixed berries for a full taste explosion!    So, especially for you Karen as requested, and for you too Jessica as I think you might like it as well, is my recipe for the easiest and tastiest banana berry cake.

BANANA AND BERRY CAKE

Ingredients:

1 cup self-raising flour

3/4 cup caster sugar

50g butter melted

1 egg, lightly beaten

1 teaspoon vanilla essence

1/4 cup (60ml) milk

One large banana mashed

One cup berries of your choice (either frozen or fresh)

What you do

(No rocket science with this recipe)

  1. Preheat oven to 180c/160C fan forced.  Spray a loaf pan with oil.
  2. Sift flour into a large bowl, stir in sugar.  Make a well in the centre.  Add melted butter, egg, vanilla, milk and banana. Stir until just combined and then (the best part) add in the berries last and mix in.
  3. Pour into prepared tin.  Bake for 35 minutes or until a skewer inserted into centre comes out clean.  Set aside to cool for 10 minutes.

Then dig in and enjoy!  Great warm or cold or anytime with a coffee.  Have fun.

I’ve got everything in my kitchen except berries…those are kind of essential. 🙂 I’d have to figure out how to convert your recipe to “American” also. 🙂 I’ve got a banana cake recipe with lots of cinnamon and the most delicious crumb topping I’ve ever had. (I bet berries would be delicious in that!) And it’s amazing with coffee. Of course, everything is great with coffee… ☕

      1. 🙂 I’m running out of milk anyway… I will be at the store tomorrow. Of course, my thighs do not need banana cake! And I’d love to come get the berries… just have to steal a plane ticket… or a plane… and a pilot… preferably a really hot one. 🙂

          I usually just google it when I need some quick “translation” . In Portugal we use metric (grams , milliliters and Centigrade degrees ) , so whenever I want to try an American recipe I need to translate it or trust that the plastic measuring cups/spoons we buy at the supermarket are accurate (and remember that English “cups” are different than American) .

  3. Thanks, Miriam, for posting this upon request. It looks great. I will have to try this as I have berries in the freezer from last year and I am trying to use them up before the new onslaught. Strawberries are already knocking on the door. Do you think it’s just as good with blackberries as well? We also have Marion berries, coming soon…

  4. Ooh baking! I love to bake 🙂 Can’t wait to try this out. Although, can the raspberries be substituted with strawberries? We don’t get raspberries in India.
